Funk…

I don’t know if it has to do with the crappy weather. Or that my knee has been aching the past week and I have the Parkway Half Marathon this weekend. Maybe it’s because I never got the memo Mason’s school changed the field trip date and he missed it today. Perhaps it has to do with Taylor and all her yelling she feels is necessary. Which is now leading to me having a headache. Could be because my carpets are dirty and my steam cleaner is in the shop. Or that there is never enough time in the day to shorten my project list. For all I know I could be pregnant. Ok, it’s not that, just wanted to see if you were still reading all my complaining. ;) Bottom line, I’m in a funk and I don’t like it!! GO AWAY FUNK!!

Pork Chops

Mondays always seem to be a frantic day for me. When Monday rolls around I never feel like I got enough checked off my list during the weekend. Which leads to me feeling rushed to finish before going to work. So needless to say, Monday night dinners normally don’t get a lot of thought put into them. BUT, pretty much anything that goes into my Crock Pot comes out tasting yummy anyways. :)

2 cans cream of mushroom soup

5 or 6 boneless pork chops

chopped carrots (just depends on how much you want)

seasoning (i used a greek seasoning)

~ Season both sides of your pork chops and leave on plate. Pour in both cans of soup and spread along the bottom of your Crock Pot. Next, arrange your pork chops over the cream of mushroom soup. Then place carrots around the outside of your dish. Cook for 6 hours on low. Serve with a side of brown rice or green salad.

And because of this slight problem (i think my dirty car and hatred of cleaning toilets is a much bigger problem) I have learned to shop for deals. I’ve figured if I can save money, I will have more to spend! Kinda like if I eat the whole box of Resse’s Pieces in one day its less calories.

The Longest Project EVER!

Holy Moly!! Did this project take long or what?! I swear; every time I got started sewing my squares together, something else would come up. I finally put my foot down and decided enough is enough; this blanket is getting done before I start any other projects!

I am pleased to say, Baby Girl is FINALLY able to enjoy her rag quilt. It turned out much bigger then what I was planning, but that is completely my fault. I couldn’t resist adding more prints and rows each time. I used 6.5 squares with a .5 seam, which I think for the next one I’ll make the seam a little larger. That way it looks a little more “ragged”. Of course I ran into a few kinks along the way, but I figured that would happen with being a beginner. Hopefully I’ll work everything out on the next one and then work on a tutorial. But for the time being, I’m going to watch my little girl enjoy her blanket. :)

What the!!!

Late last night I was leaving the gym and all of a sudden, WHAT THE H-E-double hockey stick (i was keeping that pg rated. we all know what i really said) blurted out of my mouth as I slammed on my breaks and threw my car in reverse. I could not believe my eyes! Don’t get me wrong, I’ve seen a possum before, but never has a grown possum actually sat in front of me while eating his dinner and staring at me. My headlights, squealing tires, and camera flash did not scare this guy away. And by the looks of him I know why, he’s scary!

BUT do you know what’s not? This book. Which I totally forgot about until I almost ran over this guy. Can I say I’m happy that I almost ran him over? I’m not one to be cruel to animals, but if I hadn’t I would never have remembered this book. And it was a favorite of mine while growing up. My mom still has it on her bookshelf, completely taped up from all it’s use. I can’t wait to read it to my kids!

Enchilada Pie

I have to admit… this is more on the lines of a layered enchilada then a pie. But, since it’s my recipe I can call it whatever I please. And Enchilada Pie sounds a whole lot better then Enchilada Layer. :)

1.5 lbs ground beef

1 can (14oz) enchilada sauce

1 can (7oz) diced chilies

1/2 cup cheddar cheese

1/2 cup monterey jack cheese

12 corn tortillas

1 pack taco seasoning (i used burrito seasoning this time since i was out)

Brown meat with taco seasoning and drain. I personally don’t follow the directions on the back of the packet and add water. Because once done browning, I rinse the meat off in a colander to get rid of any extra grease. Once meat is rinsed off, pour into a mixing bowl. Add diced chilies and HALF of the enchilada sauce, stir well. Next layer 4 corn tortillas on the bottom of your Crock Pot. Spoon in half of your meat mixture, plus 1/3 of the cheeses. Layer again with 4 tortillas and half of the remaining enchilada sauce. Repeat steps with the remaining meat mixture, tortillas, enchilada sauce and cheese. Cook on low for 3-4 hours.

Turkey Spaghetti

The Crock Pot alone is a quick and simple way to make meals. But if you need something VERY quick and simple, here you go: Turkey Spaghetti!

2 lbs ground turkey

1 67oz jar of spaghetti sauce (the LARGE size)

4 garlic cloves, minced

3 tablespoons italian seasoning

parsley

whole wheat spaghetti noodles (cooked of course)

Season ground turkey with 1 tablespoon of italian seasoning and brown. Drain and add to Crock Pot. Pour in spaghetti sauce, minced garlic, and the rest of your seasonings. Stir well. Cook on low for 6-8 hours. Serve over whole wheat noodles and a green salad.

~ SIDE NOTE: This recipe makes a large amount of sauce, which I halve and put in the freezer to use within the next few weeks. If you would like to make a smaller serving, use 1 lb ground turkey and 1 48oz jar of sauce. Change seasonings accordingly.

3 Little Monkey’s

Three little monkey’s jumping on the bed… Ok, not quite yet. These three little monkey’s are just 7 weeks. But, my cousin Tawny, better not shut her eyes because they’ll be doing it soon enough! In my opinion you can NEVER have to many receiving blankets with one child, so I’m going to guess it’s the same for triplets. Times 3!
